Taking on New York vibes with sports on the TV, famous faces on the walls and soul music to bring on the good vibes, the boys at Burger Republic certainly know how to brighten up your day.

Whether you’re looking to escape from the office for a bite to eat or taking the family out for dinner (the kids will love their thick shakes), Burger Republic is the place to be.

We were lucky enough to get an inside peak into the kitchen at Burger Republic and Paolo has shared with us a little more about his beloved Burger bar, but we still couldn’t get out of the him the special ingredient in their smokey barbecue sauce.

 

How did you get your start in the restaurant industry? 

I self funded myself along with my previous business partner and through lots of hard work we opened in November 2013.

Can you tell me a little about your journey to opening your restaurant? 

I’d had the dream for a long time and spent many hours at my previous employer doing business plans (apologies to them) and I was ready to go. I had it all mapped and out just needed finance and the right business partner.

Where does the name come from? 

Burger bars were taking off. I just liked the word ‘republic’ and tagged it on.

How would you describe the restaurant? 

New York style feel and buzz. We play great music, soul, funk, classic rock and it’s a little quirky and busy but it has a great atmosphere.

Where did the concept for the restaurant originate from? 

Just from within myself. I built it up around my own personality, things I like, little touches that appeal to the senses.

What are your signature dishes? 

We’ve had some of our burgers since we first opened, ‘The Gaucho’, ‘Castro’, ‘Sweet Thang’ and ‘Tradie’ to name a few. We’ve since added other great burgers, some inspired by Asian flavours, kimchi, soy glaze and tagorashi spice. These worked really well with aged, char grilled beef. 

We’ve also added great all beef grilled hotdogs, southern style buttermilk fried chicken, salad options & Side. 

This is all complimented with craft beers and killer milkshakes.

What is the most popular dish on the menu?

Our classic cheeseburger is our top seller. It’s our version of the traditional flavours that go into making the ultimate cheeseburger. It’s served with our signature tangy house sauce and in-house fries. 

Is there an ingredient you use a lot that would surprise people?

There is a secret ingredient in our house made smokey barbecue sauce that would definitely surprise people. But I cannot tell you what that is.
